Charles Charbonneau Named Executive Chef At Hilton Waikoloa Village

KOHALA COAST, Hawaii -  The culinary team at Hilton Waikoloa Village is being led by award-winning Executive Chef Charles Charbonneau. Chef Charles brings more than 30 years of hospitality experience to the Big Island resort and will oversee the culinary operation of the dining outlets, lounges and banquet operations.
Chef Charles attended the prestigious Culinary Institute of America in Hyde Park, New York, at the age of 19 where he learned from the European Masters teaching at the Institute.

Following his schooling, Charbonneau spent 15 years at Interstate Hotels and Resorts, including his most recent position of executive chef at Sawgrass Marriott Resort and Spa in Florida. Charbonneau was previously corporate chef and corporate director of food and beverage for Interstate Hotels and Resorts. During his tenure with Interstate, he was the food and beverage task force commander for the openings of the Marriott Moscow Grande and the Marriott Royale Aurora Bolshoi both located in Moscow, Russia, as well as for the opening of Praia Del Rey Marriott, Obidos. Portugal. Charbonneau also had the honor of being selected as President Clinton's personal chef during a summer vacation on Martha's Vineyard, Massachusetts in 1994.

Chef Charles was affiliated for many years with the NFL as the representing chef to the Jacksonville Jaguars at the national "Taste of the NFL" event held each year the night before the Super Bowl. The annual event benefits Second Harvest Food Banks throughout 32 NFL cities.
Prior to joining Interstate Hotels and Resorts, he held various culinary positions for the Ritz Carlton Hotel Corporation.

Chef Charles is the son of a Japanese mother, who immigrated to the United States after World War Two, and an American father. Together they inspired him to enter the restaurant industry at a very early age. Without their early tutelage, he would not have become a chef. Travel and working with industry professionals also have shaped his culinary vision through out his career.
"A chef is only as good as the places they have been and the things that they have accomplished," according to Charbonneau. He said his love of travel and pristine ingredients including the world's freshest fish is what brought him to Hawaii. Charbonneau is married with three children, who are his pride and joy. His hobbies are hiking, travel and sports.
