SAN FRANCISCO - Hilton San Francisco Union Square today announced the appointment of Thomas Vertl as the executive chef at the hotel's innovative gastro-pub eatery, Urban Tavern. As the head of the culinary team of Urban Tavern, Vertl will oversee the development and execution of the restaurant's breakfast, lunch and dinner menus.

Chef Vertl brings with him 25 years of hospitality and culinary experience. Most recently, he served as the food and beverage manager at the Intercontinental Los Angeles Century City. Prior to that, he was the banquet chef at The Peninsula Hotel in Beverly Hills and held sous chef and chef de cuisine positions at some of L.A.'s most notable eateries, Church & State Bistro and Röckenwagner Bakery.

Growing up and studying in Vienna, Austria, Chef Vertl had the unique opportunity to apprentice for three years with the noted European chef, Wolfgang Metznik. At the same time he worked on his diploma at Vienna School for Culinary Arts and on a Master's Degree in marketing management at the Academy of Integrated Communications in Vienna. His European culinary experience has taught him to respect the cultural significance of food and to value simplicity, letting the market-fresh ingredients he uses in his dishes speak for themselves. Chef describes his cuisine as "comfort fare with a fine dining twist" and believes that menu items should evoke happiness, excitement and curiosity in guests.

"The Bay Area is widely known as a culinary hot spot in large part due to its global cultural influences paired with an abundance of readily available locally sourced ingredients," said Chef Vertl.
