Surf And Turf Arrives In The Heart Of Cambridge at Hilton Cambridge City Centre
Hilton Cambridge City Centre Welcomes Guests to New Bull & Bass Restaurant

CAMBRIDGE, United Kingdom - Hilton Cambridge City Centre unveiled its new restaurant concept Bull & Bass this month. The new menu concept brings a range of surf and turf dishes to the landmark Cambridge hotel.
"The Bull & Bass Restaurant has now been brought to life with our newly refined menu of signature dishes combining mouth-watering dishes from land and sea to suit all pockets," said Richard Finn, general manager, Hilton Cambridge City Centre. "Our goal was to create a classy, whilst relaxed, environment, to bring a lot of cheer and new flavours to both our hotel residents and locals in Cambridge alike. The Cambridge restaurant scene has so much to offer both residents and visitors, and I believe we have identified something unique to Cambridge City."
"Our menu is built on great seasonal and sustainable British ingredients with a focus on surf & turf pairings. These include a number of great meats and seafood from the grill and our modern take on some classic dishes paired with an amazing wine selection. Our beef fillet with whole lobster, pork belly with wasabi tempura prawns, salt-crusted whole sea bass and the rib of beef are just a selection of our new tasty signature dishes," said Kiran Selvarajan, head chef, Hilton Cambridge City Centre.
All the beef cuts have been sourced from Casterbridge in the West Country, which proudly carries the Red Tractor Logo and all meats are dry-aged on the bone for extra tenderness and flavour. All Casterbirdge beef is reared in the six counties of the West Country; Cornwall, Devon, Somerset, Gloucestershire, Dorset and Wiltshire. In addition, the free-range pork comes from farms in the coastal areas of Norfolk near Eye, with the pigs being Duroc & Hampshire breed cross. They are supplied by Cherry Orchard, whose farms are free range and certified under Red Tractor and RSPCA Assured schemes.
The Bull & Bass branding, menu design, internal hotel advertising, wine selection, new team uniforms and newly purchased items of décor and furniture were all choreographed by the hotel's operations manager, Russel Goodison, who brought together the strengths of both internal and external stakeholders in this project. "Since opening at the start of June, we have already seen our covers double for dinner service, and we've engineered our room service menu and the bar & lounge menu to also feed-off the Bull & Bass dishes. Feedback from our guests has been very positive, and we plan to roll out more evening 'specials,' along with regular menu changes, including dishes with Wagyu beef," said Goodison.
The new wine list features a unique and creative range of familiar classics, new discoveries and indulgent delights from both the old & new Worlds. The robust Federalist Collection from the Napa Valley, California, with predominantly Zinfandel and blended red wines, compliment the turf dishes, whilst the elegant Mediterranean Rose wines bring the surf dishes alive.
The Bull & Bass restaurant is located on the first floor of Hilton Cambridge City Centre and open from 6pm until last orders at 10pm, 7 days a week. Bookings can be made directly with the hotel or via Book-a-Table. Discounts are also available for members of the Tastecard, Gourmet Society, CamCard, LivingWell Fitness members and the new Cambs Pass.
