‘Opus’ A New Destination Grill In The Heart Of Orchard
An Innovative Bar and Grill Offering Signature Himalayan Salt Dry-Aged Prime Meats, Sustainable Seafood Choices and Seasonal Ingredients Cooked Over Charcoals for the Unique Caramelized, Smokey flavor

SINGAPORE - Uncover the purity of grilling at the new Opus Bar & Grill located in Hilton Singapore on Orchard Road. The new modern grill offers sustainable seafood choices and prime cuts, which are dry-aged in-house, and expertly cooked over charcoals for an intense depth of aroma and flavor.
Determined to make steaks that are some of the best in Singapore, Opus is the first grill in Singapore to have a bespoke Himalayan salt-tiled aging cabinet, where hand-selected prime meats are dry-aged between 14 days to 36 days on premise for perfectly marbleized, tender meats with a rich depth of flavor. The grill uses only charcoals to ensure the proper temperatures are reached for the white-hot heat sears and creates a delicious, caramelized and smokey flavor.
Opus charcoal grilled steaks include:
- Australian Rangers Valley Angus OP rib-eye
- 280g Australian Angus 150 days grain-fed rib-eye
- 220g Australian Angus 150 days grain-fed tenderloin
- 220g Kobe Wagyu rib-eye marble score 6
The modern grill also prides itself as being environmentally conscious having achieved the Marine Stewardship Council (MSC)'s Chain of Custody certification even prior to the opening. Seafood dishes labeled with the ecolabel in the menu are prepared with seafood sources that are sustainably caught.
MSC Certified dishes from the Opus menu include:
- MSC certified black cod carpaccio served with dehydrated seaweed, cucumber caviar, shallot and ginger dressing
- MSC certified seared Hokkaido scallops served with blood sausage, edamame and miso espuma
- MSC certified Glacier 51 toothfish fillet with grilled leek and brown butter dashi
The Opus culinary team focuses on using simple cooking techniques partnered with the purity of charcoal grilling to let quality ingredients speak for themselves.
Other standout grilled dishes from the Opus menu include:
- Smoked buffalo mozzarella salad served with heirloom tomatoes, charred fennel, grape fruit and chocolate balsamic
- Char-grilled gluten-free lamb cutlets served with massaman curry emulsion, peanuts and coriander
- 36-hour pork belly with lychee and coffee
The Opus bar stays true to the grill concept with cocktails inspired by different aspects of the cooking process from subtle wood smoke flavor to sweet caramelization with direct flame. They are captured in four unique creations: Jalisco Dash, Passionate Flip, Salted Caramel Old Fashioned and Bloomsbury Bliss. In addition, there is also a stunning line-up of cocktails inspired by Asian cuisine like the fiery Tom Yum (Thailand), exotic Durian (Malaysian) or the milder Miso Soup (Japan).
Opus Bar & Grill features a show kitchen with open flame grilling that creates energy and buzz where diners can feel part of the action and enjoy the wonderful aromas wafting from the grill. The warm and welcoming interior design of Opus is influenced by evenly spaced, clean flowing lines, which are used to create a dramatic, fluid and sculptural environment. Seating 102 guests at the main dining area and 58 guests at the bar, it also features one private dining room for up to 20 guests that can be divided into two separate rooms.
