Beaujolais Nouveau At Hilton Hanoi Opera With Michelin Star Chef Eric Maio

HANOI, Vietnam -  Guests at Hilton Hanoi Opera can, for the first time, look forward to a special treat this Beaujolais Nouveau Day 2009, as the hotel specially invites Michelin Star Chef Eric Maio to showcase his French culinary epiphanies at its award-winning Ba Mien restaurant.

Beaujolais Nouveau Day is considered to be one of the biggest events in France by wine producers. It traditionally falls on the third Thursday of November every year, celebrating the end of the wine harvest in France.
 
This season, Chef Eric Maio has chosen Hilton Hanoi Opera as the destination to bring his exceptional flavours to diners in French-influenced Vietnam.

“‘I have been dreaming of coming to Hanoi for a long time as it has long been considered to be the hub of Asian Gastronomy. I am indeed excited to have a special menu at Ba Mien restaurant, which has a renowned reputation for its authentic Vietnamese cuisine,” he says.

Ba Mien, meaning “three regions” in Vietnamese, pays homage to Vietnam’s three culinary and climatically varied regions, all of which celebrate distinctively different traditions and flavoursome delights.

Chef Eric Maio will prepare a six-course menu, consisting of creative French favorites such as Veal sweet bread and crayfish fricassee with truffle, roasted venison in cocotte in cêpe nougatine crust, stuffed pigeon in puff pastry with Swiss chard, truffle, foie gras and apple. For a sublime gastronomical experience, diners can also request for their meals to be paired with ‘Louis Jadot’ wines as well as get entertained by the hotel’s in-house band.

A graduate of a tourism-hotel school in Menton, France, Chef Eric Maio has worked in many fine-dining establishments such as Le Palais à Biarritz, La Bonne Auberge à Antibes, Marc Veyrat à Annecy, Chef Adjoint, Le Savoy à  Cannes and Bruno à Lorgues in France.
 
A key turning point in his career occurred when he and his young wife decided to move to L’Auberge des Fontaines d’Aragon Restaurant in Montauroux, where Chef Eric Maio took over ownership of the restaurant. The couple had the sole purpose of converting the deserted restaurant into one that offered an exceptional dining experience. Their endeavors eventually paid off when the restaurant was awarded One Michelin Star in 2005.

To complement Chef Eric Maio’s residence at Hilton Hanoi Opera, the hotel has also arranged for a variety of activities such as a four-course dinner menu on 20 November, a Cooking Class on 21 November and a Feature Sunday Brunch with Chef Eric Maio on 22 November.
